Paleo Carrot Banana Muffins

These are one of our favorite muffins.  We love them for lunches, a quick breakfast, or as a snack throughout the day.  We usually make them as mini muffins.  That size tends to work better for kid's lunches and for snacks.  We also usually double the recipe and throw a bunch in the freezer.  Then you can put a frozen one in a lunch, it'll be thawed by lunchtime!  So perfect, and healthy!

Carrot Banana Muffins

  • 2 cups almond meal
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tblsp cinnamon
  • 1 cup pitted dates
  • 3 bananas
  • 3 eggs
  • 1 tsp apple cider vinegar
  • 1/4 cup melted coconut oil
  • 1 1/2 cups shredded carrots


  • Preheat oven to 350 F
  • Combine dry ingredients (almond meal, baking soda, salt, and cinnamon) in a large bowl.
  • In food processor (or blender) combine dates, bananas, eggs, vinegar, and oil.
  • Add mixture from food processor (or blender) into large bowl with dry ingredients.
  • Mix in carrots.
  • Spoon into lined muffin tins.
  • Bake at 350 F for 25 minutes.
