Quick and Easy HEALTHY Chicken Waldorf Salad

I remember being a little girl, my grandmother would make this GROSS mix of mayo, chicken, apples, walnuts and grapes.  EWWW....   When I started Focus T25 last summer, I saw this recipe and IMMEDIATELY turned up my nose.  BUT, I decided that this mix looked different and so I gave it a whirl!  I'm SO glad I did!  I love it served over a bed of mixed greens for light and healthy lunch on the go!


5 oz. Cooked chicken breast cubed.
1/4 medium apple, thinly sliced
1 Tbsp. Chopped raw walnuts
1/4 cup halved red grapes
1 Tbsp. Citrus Vinaigrette ( see recipe below)

*Combine chicken, apple, walnuts and grapes in bowl and mix well!
* Drizzle with citrus Vinaigrette

3 Tbsp. Fresh 100% orange juice
2 Tbsp. Fresh lemon juice
1/2 tsp. Raw honey
2 tsp. Dijon mustard
3 tbsp. Evoo
Combine all ingredients.. except mustard and olive oil....whisk...then add in mustard and slowly add in oil while whisking....mix well!!
