Baked Rosemary Chicken with Sweet Potatoes

roasted chicken paleoOkay, Okay, so we're NOT going to be dining on Sprinkles... she is TOTALLY only a layer hen!  But -- I just love this photo of her sneaking into my garage and cuddling next to the roasting pot!  Is it NOT the cutest photo?!?  Sprinkles has such a fun personality and believe me, she gets VERY excited for the scrapes of this meal!!  I hope you enjoy!


  • 2-3 lbs chicken breast
  • 3 tbsp extra virgin olive oil
  • 3 cloves of garlic, minced
  • 1 tsp of dried rosemary
  • 1 lemon, zested and sliced
  • 2 medium sweet potatoes, in wedges 
  • 1 medium onion, quartered
  • salt and pepper to taste


  • Preheat oven to 350 degrees F.
  • Season chicken with salt and pepper.  Transfer chicken to large baking dish.
  • In small bowl, combine olive oil, garlic, and lemon zest.  Stir to combine.
  • Rub lemon mixture onto chicken.  Place a few lemon slices on top of the chicken.
  • Place sweet potatoes and onions in a mixing bowl.  Drizzle lightly with olive oil, season with salt and pepper and toss to coat.  Arrange in pan around the chicken.  Sprinkle rosemary on the chicken.
  • Cover pan with aluminum foil.  Bake in oven for 30 minutes. Remove foil and bake for an additional 15 minutes.
