21 Day Fix Approved Strawberry Shortcake

Okay, okay, so not literally strawberry shortcake, but it does taste like strawberry shortcake!!

I love this as breakfast, a snack or even dessert!  It's just delicious and healthy!!


Strawberries & Cream:
1 yellow of cooked quinoa
1 purple of sliced, unsweetened strawberries
1/4 cup of unsweetened coconut milk 

**Place all ingredients in a bowl and enjoy!**

Quinoa is such an amazingly healthy food packed full of so many amino acids, proteins and good stuff!  According to the Food & Agricultural Organization of the United Nations, more studies are being done on the anti-inflammatory phytonutrients of quinoa.  Since my Hashimotos leaves me with a lot of inflammation, this sounds like good news to me.  So, while not considered to be a paleo food, it is something I include in my meal plan a few times a week!
