Oven "Fried" Paleo Fish

My husband loves a good fish fry.  In Western PA this is almost a Friday night ritual.  However- anything deep fried makes me sick to my stomach and isn't good for you.

This healthy alternative is not only delicious, it is paleo friendly!  It is also kid tested and husband approved!  Serve with a side of roasted asparagus and mixed berries for extra smiles!

* five, 4 ounce fillets of white fish
* 1/2 tsp black pepper
* 1/2 tsp red pepper powder
*  1/2 tsp dried dill
* 1/2 tsp of garlic
* a sprinkle of pink salt
* 1 cup of almond meal
Combine dry ingredients and set aside.

1/4 cup of melted coconut oil.  Brush each side of the fish filet with coconut oil and dredge fillet in dry mix, covering each side.  Place on a lined baking sheet.  (I used parchment paper).

Bake at 400 degrees until golden brown.

Serve & watch the smiles!  And make your kids do the dishes or clear the table!
