Banana Nut Protein Pancake

Ingredients:

1 cup Old Fashioned Oatmeal
1/2 cup low fat ricotta or cottage cheese or Greek yogurt (or 1/2 cup pumpkin puree for dairy free)
1 mashed ripe banana
1 T walnuts
4 egg whites
1 whole egg
1 tsp baking powder

Directions:

  1. Blend all ingredients in a food processor or blender.
  2. Cook on griddle.
