Clean Eating Easy Pumpkin Breakfast Bake

In my opinion, it does not need to be fall to enjoy pumpkin!!  I love pumpkin and love it all year round!  Pumpkin is also safe on my anti-Candida nutrition plan.

I had been making pumpkin pie steel-cut oats last year and thought why not bake something like that?

So experiment is what I did! I ended up with this delicious "treat" that is also healthy.  I enjoy it with a big cup of green tea.  My daughter found that adding in a few raisins was also tasty.  Unfortunately, I can't have raisins with my candida issues!  You could also add in some pecans!

Pumpkin Oatmeal Bake

1 can organic pumpkin
1 cup old fashioned oats
1 can unsweetened coconut milk
1 tablespoon of Stevia
1 tsp vanilla
1 dash of pumpkin pie spice

Mix the ingredients together, making sure that the coconut milk is free of clumps.  I find a hand mixer  works best for this.  Pour the contents into a baking dish, bake at 375 degrees for approximately 50 minutes (or until the top no longer giggles!)
