Tomato, Spinach, and Egg Scramble

Yes, this is a crockpot challenge, but we have to eat other meals, too!  Plus, it is always a good idea to try new things!  Breakfast can be a busy time for us moms, so why make it busier?  Eggs are quick, easy and healthy.  Plus, you can chop the tomato the night before and just toss in some spinach.

Healthy- Clean - Fast & Family Friendly!  Do you agree?

Tomato, Spinach, and Egg Scramble

Ingredients:

2 eggs and 2 whites
1 cup spinach
1/4 cup chopped tomatoes


Directions:

  1. Turn on stove top burner to medium heat.
  2. Add a splash of olive oil to a small frying pan.
  3. Add spinach to pan.  Stir frequently until spinach cooks down.
  4. Whisk eggs in a small mixing bowl.
  5. Pour tomatoes and eggs into the frying pan. 
  6. Stir frequently for 2-4 minutes or until eggs are set. 
Serve with 1 slice of Ezekiel toast
